Being a mom of four, it’s nice to every now and then, get a break from dinner duty. Some nights the kids ask for breakfast for dinner (which is usually cereal or waffles), and other nights we are a little more “elaborate”. I’ve learned that allowing my older children to help out in the kitchen has been a great way to relieve some stress from my daily routine; it encourages independence and allows us all to spend quality time together. In honor of “International Cook With Your Kids Day,” which is on October 15th, my husband and kids cooked up a fun and easy weeknight meal that anyone can enjoy! A Beef Burrito Bowl Bar with Uncle Ben’s Ready Rice!
To make this a quick and easy dinner, my husband assigned each of our children age-appropriate duties in creating the meal. My hubby took charge of the stove, our two oldest children handled the slicing and chopping of the toppings, and my little guy was in charge of helping with the rice! All I had to do was go to Walmart to do the shopping!

We LOVE rice in our house, and to be able to cook it in 90 seconds is pretty awesome!!! For this recipe they used Uncle Ben’s Spanish Style Ready Rice, ground beef, refried beans, black beans, corn, and toppings such as sour cream, shredded cheese and jalepenos, yum!
If you want to make this recipe, here’s what you’ll need:
- 2 packets of Uncle Ben’s Ready Rice, Spanish Style
- 1 lb. ground beef
- taco seasoning
- 1 can of corn
- 1 can of black beans
- 1 cup shredded cheddar cheese
- 1/2 cup of sour cream
- Salsa
- 8 flour tortillas
- Toppings: chopped tomato, jalapenos, cilantro, red onion, sliced avocado and lime for garnish!
While our older kids did the chopping and prepping of the toppings . . .
My husband browned the ground beef and mixed in the taco seasoning and refried beans.
Cayden, our 7 year old, helped my husband microwave the Uncle Ben’s Spanish Style Ready Rice. We like to have him read the directions out loud, and then ask him to explain to us what the instructions are telling us to do, as it’s a great way to practice comprehension.
I thought it was really cool that the packaging has cool zones on the sides (where his fingers are placed), so he was able to safely remove the packet from the microwave (with my husband’s supervision of course).
They poured the Ready Rice into a serving bowl . . .
and gathered the other items on our island to create the Burrito Bowl Bar!
When we make burrito bowls, we like to place the flour tortilla in the bowl first, then fill with the Uncle Ben’s Ready Rice and ground beef/refried beans mixture. Next we let the kids get creative and layer their toppings however they like!
The kids tend to omit the onions, jalapenos and tomatoes, lol. But my burrito bowls get all the toppings!!!
